Zucchini Bread

3 cups flour

1 tsp salt

1 tsp baking soda

1 tsp baking powder

1-2 tsp cinnamon (depending on how much you like cinnamon)

3 eggs

1 cup oil

2 cups sugar

2 cups grated zucchini with skin

1 tsp vanilla

 

Sift first 5 ingredients. Set aside. Beat eggs till foamy, add oil, sugar, squash and vanilla. Add flour mixture slowly till mixed well.

Pour into well greased and floured loaf pan.

Bake 1 hour at 325 degrees.

 

 

This is actually my mom's recipe and was probably her most famous recipe. She was a great cook all around (aside for her excessive use of MSG) but everyone loved her zucchini bread. Even all of my friends while I was growing up loved it, despite their distaste for zucchini.
